My Day in Food

It’s been a long but somewhat productive day.  Let’s start with breakfast… I made myself a cherry chocolate green monster, inspired by Caitlin’s at Healthy Tipping Point.

Into the blender:

  • 2 cups spinach
  • 10 frozen cherries
  • 1/2 frozen banana
  • 1/4 cup oatmeal
  • 1 pack diet hot cocoa mix
  • 1 cup light vanilla soymilk

I think this was one of my better green monsters.  The oatmeal taste might have been a little too strong, but it was chocolatey and thick.  Pat wanted eggs instead, so I made some scrambled eggs with Monterrey Jack and cheddar cheese.  We didn’t have any “real” milk so I used the light vanilla soymilk.  When I brought the eggs out, Pat commented that his eggs smelled sweet.  They still tasted pretty good!

After breakfast we took Bailey to an off-leash dog park for the first time.  We weren’t able to socialize her for a long time as a puppy because her immune system was too weak.  And since then, we’ve been a little nervous about how she reacts around other dogs – she’s very submissive when other dogs become aggressive, and seems to prefer people to other dogs.  Well, this dog park was no different – she had to go up and greet each dog owner in the park, while trying her best to ignore the other dogs trailing behind her.  But she seemed to make a few friends and enjoyed the exercise, so I’m sure we will be back soon!

Lunch was a Gardein 3 minute meal.  I picked up a few versions of these when they were on sale at Kroger last week ($2.99), and this was the first I tried.  The Sicilian Trio.

It was easy to make, and actually pretty good.  It was a little spicier than I expected it to be, but I really liked the tomato sauce.  The chicken was a little rubbery and hard to cut with just my fork, but I liked the taste.  With the package of rice, it felt like a lot of food for just 220 calories.  I would buy this one again, but I’m eager to try the other flavors.

We ran several errands this afternoon.  We spent a very long hour at Lowe’s and didn’t end up buying what we came for.  We wanted to get an area rug for our living room.  We picked one out, but they said it would be $70 to deliver it, and it was too big to fit in our car, so we’re waiting to buy it until we have a larger vehicle with us.  We also went to look for a new back door (the one we have now is an old one with a doggy door that we don’t really like), but I had no idea how expensive a single door (and installation) could be.  So instead, we bought some weather-stripping to deal with the water that comes into our house when it rains.  Pat bought a drill and a hacksaw and is ready to start the weather-stripping project tomorrow!

After Lowe’s, we went to Costco.  My parents gave us a Costco membership for my birthday, and I was so excited to go and sign up!  And shop!  We went a little overboard on this trip… yep, $186 in groceries.  Although we had dinner plans out with friends this evening, we decided that we better be eating in for the next month.  Or two months.  Most of what we bought is non-perishable or freezer food, so it should last us forever.

Dinner tonight was Barnaby’s Cafe with another couple.  Barnaby’s is one of our favorites in Houston – they have a little bit of everything.  The prices aren’t bad, but the serving sizes are gigantic, so you get a lot for your money.  This was my first time there as a vegetarian, so I looked at the menu a little differently.  Normally I would order the turkey sandwich with cranberry mayo.  Or the giant cobb salad with chicken.  Looking over the menu tonight, I realized there weren’t too many veggie options.  But, they did have a boca burger and a garden burger.

I ordered the garden burger, not sure what the difference was between that and the boca burger.  I asked our server what all comes on the garden burger and he said, “Onions… cabbage… a lot of other weird veggies.”  Hmm.  I don’t like many veggies, so the chances that I would like “weird” veggies were slim.  I ordered the garden burger with cheese, onion and avocado.  Mmmm, much better.  I also substituted the fries for grilled zucchini.

This was a very good choice.  Maybe not that good for me (do you see that mountain of guacamole?), but it was much better than my normal turkey sandwich.  Let’s be fair here, I haven’t tried anything at Barnaby’s that I didn’t like.  I’m usually not a huge fan of zucchini, but I actually ate most of it.  A very delicious and filling dinner!

No matter how full I am, I always have room for ice cream.  I’ve always said that I have one stomach for normal food and one for ice cream.  So after dinner, I suggested we try the Swirll in Houston, just down the road from Barnaby’s.  After trying Swirll in Austin, I was ecstatic to find out that we have one just down the street.  Tonight I had the Cake Batter flavor with chocolate chips, cookie dough and strawberries.  The perfect way to end the evening!

Ginger Perfume

Tonight’s dinner was Chinese Tofu from The Front Burner.  I’ve only tried cooking with tofu once before so I knew it was going to be interesting.  I started with 1 cup of brown rice and the following spices + a little ginger root.

While the rice was cooking I whipped up the sauce and started on the tofu.  Pat stopped by the kitchen and commented on the small bowl of sauce.  He didn’t think it was going to be enough, and I wasn’t sure, so I added another 1/2 serving of the sauce to the bowl.  The original serving size would have been plenty.

I had no idea how long to cook the tofu, or what heat to cook it on.  I waited until it turned a little brown.

Since Casey’s recipe used frozen veggies, I decided mine would too.  It definitely made dinner a lot faster and saved on some clean up time!  I used a mix of all my favorite veggies – red, yellow and green bell pepper with onion.

After defrosting the veggies in the microwave, I mixed them into the tofu.

And then added the sauce mix.  The sauce definitely made the meal.  I substituted the sesame oil for peanut oil (I just couldn’t justify spending $10 on a tiny bottle at Kroger).  I also added a little extra brown sugar – I heart brown sugar.

I served the final product over brown rice.  It wasn’t used to the taste (or texture) of the tofu, but dinner was delicious!  Pat commented that ginger tastes like perfume.  But according to him, that’s not a bad thing :)   I liked the ginger, but I think he would have preferred more garlic than ginger – maybe I’ll try that next time.

For dessert we had green monsters.  Into the blender:

  • 1 cup light vanilla soy milk
  • 2 cups spinach
  • 1 frozen banana
  • 2 tbsp milled flaxseed
  • 2 tbsp almond butter

I tried running again today.  I’ve been having a weird problem with my right ankle.  It doesn’t bother me when I’m actually running, but when I slow down to walk it starts to hurt.  It’s not a sharp pain, more of a cramp-like pain.  It goes away after awhile, and I can run a little more, but when I switch to a walk it suddenly starts to hurt again.  I ran for 17 min straight (1.55 miles) when I started because I knew that as soon as I stopped, I was going to feel the pain.  Has anyone else had similar problems?  It’s really annoying.

Lime Green Monster

It was still raining when I woke up this morning.  Something about the rain made it feel okay to have a completely lazy Saturday morning.  We started out with a pot of coffee and a Hungry Girl egg mug breakfast.

I added egg beaters, turkey, onion and Laughing Cow garlic & herb cheese to mine.  For Pat’s, I added sharp cheddar cheese instead of the LC.

They cooked in the microwave – an easy, no clean-up meal!

Lunch was a lime green – green monster.  Today’s green monster was inspired by Iowa Girl Eats.

Into the blender:

  • 1.5 cups light vanilla soymilk
  • 3 cups spinach
  • 2 bananas
  • 2 tbsp reduced-fat peanut butter
  • 2 tbsp flaxseed
  • 1/2 cup oatmeal (uncooked)
  • Ice

This one had an interesting taste.  It was very nutty.  I ended up adding a packet of Splenda.  The mix above made 2 servings, each about 350 calories, and it was very filling.  I wanted some extra protein after my run this morning.  I did 3.75 miles in 47 minutes.  My goal for today was to run the first mile in 10 minutes.  When I started back up with running 2 weeks ago, my fastest mile time was 11:06.  I finished it today in 9:59 :)   I also cut another 30 seconds off of my 5k – 36:30.  I feel like I’m making good progress on my goal of a 30 minute 5k, but it still feels very far away.

Steaks, Shakes and Snacks

Dinner last night was steaks on the grill.  Pat picked up a ribeye (for him) and filet (for me) at Kroger.  It’s been awhile since we had steaks – and it’s not something we eat often - but Pat was in the mood and I wasn’t complaining :)

For dessert, I made a green monster.  We felt like we could use some fruit & veggies after our heavy meal!

Into the blender:

  • Light vanilla soymilk
  • Spinach
  • Strawberries
  • Banana
  • Frozen blueberries
  • Milled flaxseed
  • Torani sugar-free vanilla syrup
  • Splenda

Tasty!  I packed up a cup for the morning too… it was just so-so as a leftover, I probably won’t do that again.  It doesn’t look very good the next morning, does it?  My food for work today:

Breakfast:  leftover green monster & oatmeal with strawberries and coconut

Lunch:  turkey sandwich on wheat thins with Laughing Cow garlic & herb cheese and spinach & diet coke

Snacks:  almonds, light string cheese, Quaker caramel rice crisps and pb & j cocoa-nana snack mix (and more chocolate covered sunflower seeds thanks to co-worker at 2 hour meeting this afternoon)

Freebird

Oh, Tuesdays… I feel like it should be the end of the week already.  The Green Monster this morning did not turn out very well.  I was out of bananas and blueberries, so I substituted for a bag of frozen mixed fruit in our fridge – which included melons and grapes, probably not the best mix.  I also did not have enough vanilla soy milk left and substituted with more juice.  I drank it, but I think I’ll stick with my original recipes from here on out.

After work today I went to volunteer at the HSPCA.  I always fall in love with several dogs while I’m there.  I’d love to bring home a friend for Bailey, but I don’t think she’d like that very much!  Tonight my little love was Mickey the Dachshund (or “weenie dog” according to the little girls there tonight).

After I volunteer I usually make a stop at a nearby shopping center to make a Target or PetSmart run, depending on what we need.  Right next to Target is my favorite fast food restaurant – Freebirds World Burrito.  It’s like a Chipotle or Qdoba, but better.  A co-worker introduced me to Freebirds shortly after I moved to Houston, and it was love at first visit.  Not only is the food amazing, but every single person who works there is very cheerful and chatty.  Just visiting the store puts me in a good mood.

I usually order the “HV” – Hybird Veggie.  Rice, mixed cheese, black beans, mixed veggies, mild sauce, pico de gallo and guacamole on a wheat tortilla.  AMAZING!

Pat had a work lunch at Cheesecake Factory today.  He brought me home a slice of their red velvet cheesecake.  It’s so good, but super rich, so I just had a few bites for dessert.
