Steaks, Shakes and Snacks

Dinner last night was steaks on the grill.  Pat picked up a ribeye (for him) and filet (for me) at Kroger.  It’s been awhile since we had steaks – and it’s not something we eat often - but Pat was in the mood and I wasn’t complaining :)

For dessert, I made a green monster.  We felt like we could use some fruit & veggies after our heavy meal!

Into the blender:

  • Light vanilla soymilk
  • Spinach
  • Strawberries
  • Banana
  • Frozen blueberries
  • Milled flaxseed
  • Torani sugar-free vanilla syrup
  • Splenda

Tasty!  I packed up a cup for the morning too… it was just so-so as a leftover, I probably won’t do that again.  It doesn’t look very good the next morning, does it?  My food for work today:

Breakfast:  leftover green monster & oatmeal with strawberries and coconut

Lunch:  turkey sandwich on wheat thins with Laughing Cow garlic & herb cheese and spinach & diet coke

Snacks:  almonds, light string cheese, Quaker caramel rice crisps and pb & j cocoa-nana snack mix (and more chocolate covered sunflower seeds thanks to co-worker at 2 hour meeting this afternoon)

Grilled Pineapple

Pat was in the mood to grill tonight.  We weren’t allowed to grill at the apartment, so after 9 months of no grill, he couldn’t wait to break ours out.  He was craving burgers and fries, and I thought it would be fun to throw on some fruits and veggies with the meat.  I made kebabs out of green and orange bell pepper and pineapple.  I LOVE grilled pineapple!

I drizzled olive oil, pepper and Lawry’s seasoned salt on the bell peppers and added some brown sugar to the pineapple.  They turned out great:

It’s been awhile since I’ve had a burger.  I ate mine on wheat sandwich thins:

Everything was delicious!
